Vanilla Popped Nut Crunch

Ingredients

  • 3 quarts popped popcorn
  • 1-1/3 cups whole pecans, toasted
  • 2/3 cup slivered almonds, toasted
  • 1 cup butter OR margarine
  • 1-1/2 cups sugar
  • 1/2 cup Karo® Light Corn Syrup
  • 2-1/2 teaspoons pure vanilla extract

Directions

  1. Mix popcorn and nuts in a large bowl that has been sprayed with cooking spray.
  2. Melt butter in a medium saucepan; add sugar and corn syrup. Bring to a full rolling boil over medium heat, about 5 minutes, stirring constantly. Continue to boil, stirring occasionally for 8 to 9 minutes until sauce is caramel colored. Or bring to 270°F on a candy thermometer. Remove from heat and stir in vanilla.
  3. Pour over popcorn mixture; stir well to coat. Pour onto greased baking sheet or parchment paper. Cool. Break into bite sized pieces. Store in a closed container.
