Combine corn syrup, butter, extract and food coloring in a large bowl. Mix thoroughly.
Gradually beat in powdered sugar, using an electric mixer.
Shape into small balls, about 3/4-inch in diameter. Place on parchment paper OR wax paper. Gently flatten each ball with a flat bottomed drinking glass that has been dipped in granulated sugar (to prevent sticking).
Let mints stand at room temperature for 2 to 3 hours to dry. Store in a tightly covered container.
Varitation: Other flavorings also work well. Try almond, orange, lemon, raspberry or rum extracts!
