Peppermint Fudge

Ingredients

  • ½ cup Karo® Light Corn Syrup
  • ⅓ cup evaporated milk
  • 3 cups semisweet chocolate chips
  • ½ teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • ¾ cup powdered sugar
  • ¼ cup chopped peppermint candy of choice, for topping

Directions

  1. In a medium bowl, mix together the Karo® Light Corn Syrup and evaporated milk.
  2. Place in the microwave for a total of 3 minutes, stopping to stir every 30 seconds.
  3. Stir in chocolate chips, vanilla, and peppermint extract. Mix until completely melted and well-combined.
  4. Using a whisk, incorporate powdered sugar, mixing until smooth and no visible bits of powdered sugar remain.
  5. Pour into an 8" x 8" baking pan that has been lined with parchment paper.
  6. Sprinkle with pieces of peppermint and refrigerate for 3 hours.
  7. Once chilled, cut into squares and enjoy!
