Ingredients

Cookie Crust

2½ cups chocolate cookie crumbs
⅓ cup Karo^® Light Corn Syrup
¼ cup unsalted butter, melted

Red Velvet Cheesecake Filling

24 ounces cream cheese, room temperature
1½ cups granulated sugar
¼ cup Karo^® Light Corn Syrup
1 tablespoon vanilla extract
1 cup heavy cream
⅓ cup unsweetened cocoa powder, sifted
12-15 drops red gel food coloring

Instructions

With Karo^® in the crust to help hold it together and swirled into the smooth and creamy red-velvet filling, these easy no-bake bars will be your go-to family treat!

For the Cookie Crust

In a large bowl, add cookie crumbs, Karo^® Light Corn Syrup and melted butter, whisk to combine.
Press the mixture into a 9 x 13-inch baking dish, keeping mixture even and pressing into the corners. Chill in the refrigerator while preparing the filling.

For the Cheesecake Filling

In a large bowl, with a stand mixer or hand mixer, whisk cream-cheese until smooth. Add granulated sugar, Karo^® Light Corn Syrup and vanilla extract. Mix well and set aside.
In another large bowl, whip heavy cream until stiff but smooth, but do not over-whip. Gently fold the whipped cream into the cream-cheese mixture. Remove a heaping 1 cup of cream-cheese mixture to another bowl.
To the remaining bowl of cream-cheese mixture, sift in unsweetened cocoa powder and several drops of red gel food coloring. Mix until fully combined. If you want a deeper red, add more food coloring.
Remove the chilled crust from the refrigerator. Spread the red cream mixture on top of the crust and spread evenly. Drop small spoonfuls of the white colored cream-cheese filling onto the red colored cream-cheese. Using the back edge of a butter knife, pull through the white cream-cheese to create swirls. (When swirling, microwave the white colored cream mixture for 30 seconds; this melts it slightly and makes it easier to create swirls.)
Tightly cover with plastic wrap and place in the refrigerator overnight for 6–8 hours to firm.
Cut into squares and enjoy. Store in the refrigerator in an airtight container for 7 days or freezer for longer.

Ingredients

For the Cookie Dough

1 cup all-purpose flour
½ cup (1 stick) unsalted butter, room temperature
1 cup dark brown sugar
¼ cup Karo^® Light Corn Syrup
1 teaspoon vanilla extract
½ teaspoon Kosher salt
⅔ cup miniature semisweet chocolate chips

For the Chocolate Coating

(1) 11.5 oz. bag semisweet chocolate chips
2 tablespoons Karo^® Light Corn Syrup
1-3 tablespoons vegetable, canola, or coconut oil
(optional) Flaky sea salt, for topping

Instructions

These are irresistible and snackable! Karo^® makes the inside smooth and delicious and the chocolate coating soft and fudgy.

For the Cookie Dough

Heat the flour on high for about 30 seconds at a time. After each interval, stir well to ensure even heating. Repeat this process for a total of 1–2 minutes.* Sift and cool before using.
In a large bowl using an electric hand mixer or stand mixer, cream together butter, dark brown sugar and Karo^® Light Corn Syrup. Beat until light in color, about 1 minute. Beat in the vanilla and salt. Add sifted flour into the bowl and mix until fully combined and the dough comes together. Add in the miniature chocolate chips and stir. Using a small scoop, scoop balls onto a parchment-lined sheet tray. Place in the refrigerator while making the chocolate mixture.

For the Chocolate Coating

In a microwave-safe bowl, add chocolate and microwave for 20-second increments until melted, stirring between heating. When chocolate is melted, add Karo^® Light Corn Syrup and stir well. Mixture will get slightly thicker. If too thick, add 1 teaspoon of oil to loosen.
Remove bites from the refrigerator. Gently roll to shape into round balls. Dip each cookie-dough bite into chocolate, covering the entire bite. With a fork, grab a bite on the bottom and tap to remove excess chocolate. Place back on a parchment-lined tray. Chocolate may need to be reheated during this process but only for 15–20 seconds, just to loosen. Once all bites are covered, sprinkle with flaky sea salt and place back in the refrigerator to harden.
Enjoy right away or store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.

*ALTERNATIVE: Preheat the oven to 350°F. Sprinkle flour evenly on the pan. Bake it for 6–8 minutes, stirring halfway through baking. Allow the flour to cool before using.

Gingersnap Crust

2½ cups gingersnap cookie crumbs, about 30 crushed cookies
5 tablespoons unsalted butter, melted
3 tablespoons Karo^® Light Corn Syrup

Filling

(1) 0.25 oz envelope unflavored gelatin
¼ cup cold water
2 (8 0z. pkg.) cream cheese, room temperature
1 cup granulated sugar
½ cup Karo^® Light Corn Syrup (plus 2 tablespoons for whipped cream topping)
1½ cup homemade eggnog (see recipe below or use store bought)
1 teaspoon rum extract
1 teaspoon ground nutmeg
2 cups whipping cream

Homemade Eggnog

2 large eggs
2 egg yolks
¼ cup Karo^® Light Corn Syrup
1 cup whole milk, heated to almost boiling temperature
1 cup heavy cream
1 teaspoon rum extract
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg

Instructions

Nothing says the holidays like the creaminess and festive flavors of eggnog. Thanks to Karo^®, these holiday bars have a delicate sweetness and a smooth and creamy texture.

For the Crust & Filling

In a small saucepan over low heat, dissolve the gelatin with ¼ cup cold water. Whisk until it begins to thicken slightly. Remove from heat and allow to cool. Set aside.
In a large bowl, stir together the gingersnap crumbs, butter and Karo^® Light Corn Syrup. Mixture should be like coarse sand. Press firmly and evenly into the bottom of the 9x13-inch baking dish. Place in the refrigerator to chill.
By hand or with a stand mixer, whisk the cream cheese until smooth. Add granulated sugar, ½ cup Karo^® Light Corn Syrup, cooled gelatin, eggnog, rum extract, cinnamon and nutmeg. Mix together until well combined with the mixer. Set aside.
In another bowl, add the heavy cream and 2 tablespoons Karo^® Light Corn Syrup; whisk until stiff peaks form. Reserve 1 cup of whipped cream for topping and fold in remaining whipped cream into the cream-cheese mixture.
Evenly spread the cheesecake filling over the top of the chilled crust. Cover and chill the cheesecake for at least 4–6 hours or overnight.
Cut into square bars, pipe fresh whipped cream on top of each bar and sprinkle with more nutmeg. Serve or store in an airtight container in the refrigerator for 5–7 days.

For the Homemade Eggnog

Add eggs and Karo^® Light Corn Syrup to a high-speed blender. Blend on medium-high speed for 1 minute. Slowly pour in ½ cup of hot milk and continue blending for 30 seconds.
Add remaining whole milk, heavy cream, extract and spices and blend for 30 seconds.
Pour into a container and place in the refrigerator to chill. Keep in an airtight container for 7 days in the refrigerator.
