Ingredients

  • 12 regular-sized marshmallows
  • 1-1/4 cups brown sugar
  • 1/2 cup butter OR margarine, softened
  • 2 eggs
  • 1/3 cup Karo® Dark Corn Syrup
  • 1 teaspoon pure vanilla extract
  • 1-3/4 cups all-purpose flour
  • 2/3 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1-1/4 cups crushed graham crackers OR graham cracker crumbs, divided
  • 1 cup milk chocolate chips OR chopped milk chocolate candy bars

Directions

  1. Preheat oven to 350°F. Cut each marshmallow in half crosswise.
  2. Beat brown sugar and butter until fluffy in large bowl with mixer. Add eggs, corn syrup and vanilla until well blended. Gradually beat in flour, cocoa powder, baking powder and salt. Stir in chocolates and 1/2 cup graham crackers.
  3. Place remaining graham crackers in a shallow bowl or plate. Drop a heaping tablespoonful into crumbs and roll to coat all sides with graham cracker crumbs. Place onto greased baking sheets, ; flatten with the palm of your hand. Top each cookie with 1/2 marshmallow. Bake for 10 to 12 minutes until cookies are set but still soft. Cool on pans for 2 to 3 minutes. Remove to wire rack. Serve warm!
